Lemon Orzo Christmas Soup Warms Up the Holidays

By sarahward583 on June 21 2014 | 518 Views

Soup, paired with warm Kontos flatbread, makes a fragrant start to any holiday meal

Step aside, cinnamon! This year’s fragrance of Christmas is lemon. Start your Christmas dinner off with a warm, fragrant Greek lemon orzo soup.

This lemon orzo soup is made with fresh chicken broth, orzo pasta or rice, eggs, lemon zest, lemon juice and salt and pepper. Here’s how to make it:

Add half a cup of orzo pasta to your chicken broth and cook, uncovered for 10-12 minutes until tender. Meanwhile, prepare the egg-lemon mixture. Using a whisk beat three eggs until frothy. Add a teaspoon of lemon zest and the juice of two lemons in a steady stream while whisking.
When the pasta has finished cooking, turn off the heat. Ladle about two cups of broth into a bowl. Slowly add the hot broth to the egg-lemon mixture while continuing to whisk. This will temper the eggs and prevent them from curdling once they are added to the hot broth.
Stir the egg-lemon mixture into the pot and heat over very low heat for approximately 5 -10 minutes until heated through. Be careful not to boil the soup once the eggs have been added. Adjust your seasoning for salt and pepper and add more as desired.
To complete your meal, serve the soup with warm Kontos Multi-Grain Flatbread or Kontos white Pocket-Less Pita®, and Kontos hummus.

“Greek families start almost every holiday meal with this warm, delicious soup we call Chicken Soup Avgolemono. Paired with warm flatbread, it’s a fragrant, flavorful way to kick off Christmas dinner,” said Steve Kontos, vice president of Kontos Foods. “At Kontos, we love sharing our Greek traditions with foodies everywhere.”
